What is the difference between extra virgin olive oil and gourmet olive oil?
Extra virgin olive oil (EVOO) is the natural juice of the olive, obtained solely through mechanical processes and with an acidity level ≤ 0.8%. “ Gourmet ” refers to a superior selection based on its sensory profile (aromas, bitter-spicy balance), origin, and production method. In our case, we select early harvest olives , cold extraction, and batches with high organoleptic scores, resulting in greater aroma intensity, complexity, and freshness .
Where do olives come from?
We work on our estate, located in the Montes de Toledo. The most used varieties are Arbequina and Picual , harvested at their optimal point and milled within 12 hours of harvesting to preserve their properties.
Is the oil 100% natural and without additives?
Yes. Our extra virgin olive oil is 100% olive juice , with no additives, preservatives, or chemical processes. We only decant/filter it to guarantee purity and stability .
How should oil be stored to maintain its quality?
Store in a cool (15–20°C), dry, and dark place, away from light and heat. Keep the container tightly closed and avoid prolonged exposure to air. We recommend opaque or dark containers to protect the polyphenols and aromas.
What is the expiration date of the oil?
Extra virgin olive oil doesn't "expire" in the traditional sense, but it does lose some of its qualities over time. We typically indicate a best-before date of 12 months from the date of bottling. To enjoy its fullest potential, consume it within this period and don't store it for more than 2-3 months after opening if you're looking for aromatic intensity.
